Cool off with Pinkberry Summer Flavors

I don’t know about where you live, but Atlanta has been unbearably hot. I’m talking 97 degrees, humid and sticky. The only upside about it, is that we crave tasty food’s that will help to cool us down in this crazy Summer heat. I am fortunate enough to live near one of Atlanta’s 6  Pinkberry locations in the Cumberland Mall area, so I made it a point to stop by to try both of their 2 new Summer flavors, the Strawberry Margarita and Blueberry, both made with real fruit.

On this particular hot day, I opted for half and half of each flavor, topped with fresh blueberries and strawberry popping bobas. The Strawberry margarita does have a similar flavor of the drink minus the sour taste that real margaritas actually have. The Blueberry has a fresh and fruity flavor and is my favorite of the two. They both are tart, not sweet at all and they have a very light feel, which if you are looking to cool off or just have something light after dinner, this would be ideal. Feel free to get creative with your toppings since Pinkberry offers natural, organic, gluten-free, kosher and nut free. There’s something for everybody.

Product Spotlight and Review: Success Rice + Recipes + Giveaway!

This has been quite an amazing year for the blog. I went from nothing to now averaging 2-3 restaurant tasting and/or events a week and I balance that with my full-time job. The constant eating out has definitely taken its toll and I made a decision to transition my diet a bit by starting to balance my eating, by having healthy options when I’m not eating out. Now you will never see me post a recipe with some dry ass vegetables and chicken lol, but if I can find ways to incorporate some healthy options into my life, I’m going to do it.

With that being said, I was recently contacted by Success Rice to try some of their boil-in-bag rice options. This came right on time as I’ve been brain wrestling for a while about what I could do to start this healthy lifestyle. I received the coupons to try Success Rice over a month ago, so it has taken me a while to get this post up. I wanted to try it several times, to be sure I could give a full review. I would never feel comfortable recommending something that I really haven’t tried.

Brown Rice *I also purchased the Jasmine Rice but my focus was mostly on the brown

Pros:

  • Convenient and easy
  • No additives or preservatives
  • Same health benefits as the brown rice you cook longer
  • 100% whole grain, gluten-free, sodium free, cholesterol free, has fiber and is heart healthy

Things you should know:

  • I felt that it did not cook enough for me in 10 minutes. I let it cook for ten minutes first, because I wanted to follow the directions. I found that although it was done, it still had a bit of a bite to it that is similar to parboiled rice. It wasn’t bad at all, I just felt it needed an extra 5 minutes. On the second try I let it cook an extra 5 minutes and it was perfect for me.
  • 1 bag is enough for 1 serving. So if you are cooking for multiple meals I would suggest boiling more than 1 bag.

Suggestions:

  • I’ve always strayed away from brown rice because it took so long to cook and has zero flavor. I would suggest boiling your rice in some low-sodium chicken broth or stock to add some more flavor.
  • Another option would be to boil it in water with a little unsalted butter.

As much as I love to cook, these days I don’t always have the time. Christophe’s To Go is the ideal situation when you’ve gotten off work late and you want to eat before 8pm or maybe you want the kids to have a hearty meal but they’ve been at sports practice all evening so cooking isn’t an option. Christophe’s To Go has multiple retail locations throughout Atlanta as well as cooler locations. I always felt there was a need for something like this but was concerned about how healthy it would or could be as well as the ingredients used and preservatives.  Continue reading

Bloggers Night Out Cooking and Sipping at Portrait On A Plate

The menu for the night was Roasted Coconut Crusted Chicken with a warm Lentil and Spinach Salad

 

 

Some of my fellow lady bloggers got together to attend a cook and sip at local personal Chef and catering company, Portrait On A Plate . The concept is that you can bring your favorite bottle of wine or champagne, a couple of girlfriends and sip while one of their trained personal Chef’s does a cooking demonstration. You do have an opportunity to participate in the process but most of the cooking is done by the Chef. That’s not a bad thing though, Chef may not want you in the way once you’ve had a couple of glasses lol. Continue reading

Happily Eating and Drinking with Piece of Cake, Christophe’s To Go and Second Self Beer

When the email came through my inbox about a fun-filled evening of sweets and food at Piece of Cake I was so excited! Piece of Cake has always been one of my go to bakeries in Atlanta. I wasn’t sure what to expect exactly, but I knew the evening would be something special. In addition to the tasting from Piece of Cake, we were also going to try dishes from Christophe’s To Go .
